My grandfather and uncle, George and Allen Sims, and their wives, Estella and Amelia founded Sims' Bar-B-Que in 1937. George and Stella established a cafe in the country town of Hard Scramble, Arkansas, while Allen and Amelia established a restaurant in uptown Little Rock, Arkansas. Allen and George created a sweet brown barbeque sauce to go along with the tender meat that was prepared with special seasoning.
A guideline was that meat should not be cooked too quickly. They discovered that superior barbeque must be cooked slowly in order to maximize that southern flavor. In this case "slower is better."
The sauce, seasoning, and cooking technique are the unique ingredients that make Sims' Bar-B-Que a unique eating experience.
